Herb & Sweet Pea Cauliflower Rice

1 large head of cauliflower
1 large leek, chopped fine
1 red onion, chopped fine
3 Green onions/scallions
3 cloves of garlic, crushed
2 cups of frozen peas
2 tsp dried mint
2 tsp brown mustard seeds
2 tsp dried oregano
2 tbsp coconut oil
2 1/2 tbsp butter 

Himalayan sea salt to taste
Small bunch of fresh mint (chopped)  to serve
lemon quartered, to serve 

Cut off the bottom of the stem on the cauliflower and remove any leaves. Cut cauliflower into smaller chunks, only adding a small amount to the food processor at a time. Blitz/ pulse the cauliflower in small batches till is resembles fine chunks (rice). Warm a medium sized pot, add the 2 tbs of coconut oil and then add the Chopped leek, red onion, green onion and crush garlic. 

Stir till soft and lightly caramelized, add in the brown mustard seeds, dried mint, dried oregano and stir. once incorporated you can add the cauliflower and frozen peas. Stir till combined and cook for a few minutes until soft and warmed, it doesn't take long to cook as the cauliflower is so fine. Finally add the 2 1/2 tbsp butter and salt to taste. Serve with chopped fresh mint and lemon.
